Main Dishes

Cape Malay Sosaties

Ingredients: Cubed lamb or beef, onions, peppers, apricot jam, curry powder, vinegar.

Method: Marinate cubed meat in a mixture of apricot jam, curry powder, vinegar, and seasoning. Thread onto skewers alternating with onions and peppers.

Grill over Rooikrans wood until cooked through, basting with marinade.

Cape Snoek

Ingredients: Fresh snoek fillets, lemon juice, olive oil, salt, pepper.

Method: Rub snoek fillets with lemon juice, olive oil, salt, and pepper.

Grill over Bluegum wood, skin-side down, for 8-10 minutes until cooked through, turning once.

Braaibroodjies

Ingredients: Sliced bread, cheddar cheese, tomatoes, onions, chutney.

Method: Layer bread slices with cheese, sliced tomatoes, onions, and chutney.

Grill over Blackwattle wood until golden and cheese is melted.

Desserts

Grilled Cling Peaches with Honey

Ingredients: Fresh cling peaches, honey, cinnamon.

Method: Halve peaches and remove pits. Drizzle with honey and sprinkle with cinnamon.

Grill over Camelthorn wood, cut-side-down, until caramelised.

Chocolate Braai Bananas

Ingredients: Bananas, chocolate chips, marshmallows.

Method: Make a lengthwise slit in each banana and stuff with chocolate chips and marshmallows.

Wrap in foil (or leave in skin) and grill over Sekelbos wood until chocolate is melted and bananas are tender.

Side

Roosterkoek

Ingredients: Flour, yeast, sugar, salt, water, butter.

Method: Mix flour, yeast, sugar, salt, and water to form a dough. Knead until smooth, then divide into balls.

Flatten into rounds and grill over a mix of Bluegum and Blackwattle wood until golden and cooked through.
